Strawberry and Grapefruit Salad With Vacherin Chaput
Ingredients
- 1 L (4 cups) mesclun lettuce
- 2 green onions, thinly sliced
- 125 ml (1/2 cup) strawberries, halved
- 1 small grapefruit, diced
- 1 avocado, diced
- 250 ml (1 cup) Vacherin Chaput, diced
- 125 ml (1/2 cup) roasted sliced almonds
- Salt and freshly ground pepper
Preparation
In a salad bowl, mix all the ingredients together. Drizzle lightly with the vinaigrette.
Vinaigrette
Ingredients
- 125 ml (1/2 cup) canola oil
- 45 ml (3 tbsp.) raspberry vinegar
- Zest and juice of 1 lemon
- 45 ml (3 tbsp.) honey
- 30 ml (2 tbsp.) fresh basil, finely chopped
- Salt and freshly ground pepper
Preparation
In a bowl, whip all the ingredients together and set aside in the refrigerator.
Suggestion:
You can top the salad with strips of grilled chicken.

Accompaniments
These dry wines have a fruity, floral nose while offering a certain richness on the palate. Their acidity gives them a pleasant liveliness.
