Seaworthy Comtomme Cheese

Ingredients

  • 60 ml (1/4 cup) Comtomme cheese, grated
  • 60 ml (1/4 cup) cooked lobster, cut in cubes
  • 1 mango, peeled and cut in cubes
  • 15 ml (1 tbsp.) red onion, finely chopped
  • 15 ml (1 tbsp.) fresh basil, finely chopped
  • 15 ml (1 tbsp.) mayonnaise
  • Zest and juice of 1/2 lime
  • Salt and freshly ground pepper
  • Bread chosen: Brioche roll

Preparation

In a bowl, mix the lobster, mango, red onion, basil, mayonnaise, lime zest and juice and cheese together. Add salt and pepper.

Slice the roll open. Spread the lobster salad and close the roll.
