Mighty L'Hercule de Charlevoix
Ingredients
- 125 ml (1/2 cup) L’Hercule de Charlevoix cheese, grated
- 115 g (1/4 lb) ground beef
- 1 small shallot, chopped
- 2 basil leaves, finely chopped
- 1 egg yolk, beaten
- Salt and freshly ground pepper
- 60 ml (1/4 cup) marinara sauce, home-made
- Bread chosen: Ciabatta
Preparation
In a bowl, mix the ground beef, shallot, basil, egg yolk, and half of the cheese together. Add salt and pepper. Shape into meatballs and cook in the frying pan. Mix the meatballs with the marinara sauce. Set aside.
Slice the bread in half. Fill with meatballs and cover with the remaining cheese. Place the sandwich on a baking sheet and bake until cheese is melted.
Marinara sauce
Ingredients
- 30 ml (2 tbsp.) butter
- 1 onion, chopped
- 1 garlic clove, chopped
- 1 can of 796 ml (28 oz) stewed tomatoes
- Salt and freshly ground pepper
Preparation
In a frying pan, melt the butter and brown the onion and garlic. Add tomatoes. Then, add salt and pepper. Simmer over medium heat, stirring occasionally. Coarsely purée in a blender.

Try this recipe with: Victor et Berthold or L’Ancêtre Parmesan.
Accompaniments
These medium-bodied wines have a more intense colour, a rich nose dominated by fruit aromas and present but subtle tannins.
