Prepare a medium-intensity charcoal fire or set gas BBQ at medium.
In a bowl, whip the lemon zest and juice with the oil and mint. Mix together with the mango and melon.
Grill the fruit on the BBQ to char them well. Set aside.
Before serving, put the fruit on four plates. Top with Le St-Félicien Lac-Saint-Jean, the field salad and the prosciutto slices. Pour a dash of olive oil. Add salt and pepper.
You can replace the Santa Claus melon with cantaloupe.
