A firm, rindless cheese with a cream-coloured interior, buttery aroma and hazelnut flavour that becomes more pronounced with time. There are several varieties: mild (aged 60 days to 4 months), medium (aged 6 to 8 months), old (aged 12 to 15 months) and extra-old (aged over 18 months). Available from the cheese maker and in some grocery stores.
