A soft cheese made with organic, unpasteurized milk and ripened for 60 days. It has hints of cream and salted butter, with a flavour of black olives. An excellent marriage between a farm cheese made with organic raw milk and the flavour and smooth texture of fresh cream. The slightly salty flavour acquired through ripening is a perfect match for port or a good wine, and you will enjoy its sunny-coloured rind. Available from the cheese maker, in specialty grocery stores and cheese shops.
