Îles-de-la-Madeleine
This semi-soft, surface-ripened, washed-rind farm cheese is made with thermized whole milk from a single herd of grazing Canadienne cows from the Îles-de-la-Madeleine region. The Pied-De-Vent features a hazelnut and mushroom flavour.
Its name comes from the Îles-de-la-Madeleine expression “un pied-de-vent” (a wind foot), which refers to the sun’s rays peeking through the clouds.
This cheese is available from the cheese maker, at specialty grocery stores and cheese shops as well as from some supermarkets.

Accompaniments
These dry wines are characterized by fairly strong aromas of spice, toast or exotic fruit. In the mouth, they carry a rich and well-balanced texture.
