This soft, triple-cream cheese with a bloomy rind is made with thermized cow’s milk. It will captivate you with its smooth and creamy, sometimes runny, texture that melts in your mouth, leaving strong hints of hazelnut, mushroom and mild butter on the palate.
le riopelle de l’Isle is named after the famous painter Jean-Paul Riopelle, who happily lent his name to the cheese and one of his paintings to its label. Riopelle passed away a few months after this delicious cheese first went to market. One dollar from every round sold goes to a foundation for youth in the Île-aux-Grues community.
It is available from the cheese maker, at specialty grocery stores and cheese shops as well as in some supermarkets.
