Le Ratoureux is a cheese made from raw cow’s milk and vegetable rennet. It is available in impressive seven-kilo rounds that have been aged for several weeks. This cheese has a thin line of ash through its centre and a unique flavour combining the taste of melted butter and floral aromas. Available at specialty grocery stores and cheese shops, and most supermarkets.
