Fromagerie Médard
Saguenay–Lac-Saint-Jean
This soft, mixed rind farm cheese is made from pasteurized milk drawn from a herd of Brown Swiss cows on the Domaine de la Rivière farm. Its brine-washed, striped orange rind is soft and smooth with a fluffy white coat. Varying between subtle and pronounced, it has a simultaneously vegetable (mushroom, cellar and turnip with aging), lactic (butter) and fruity (nuts) aroma. Its interior is the colour of clear butter and is strewn with many small holes, and its texture is soft, creamy and smooth. This mild cheese features a slightly roasted, salty butter, mushroom and endive taste.
Le Rang des ÎLES is named for the rural road located in front of the cheese shop. Normand Côté is a fifth generation owner of the Domaine de la Rivière farm. He and his life partner Madeleine Boivin proudly transform milk from their herd at the Fromagerie Médard cheese shop. Theirs are farm cheeses; they are produced exclusively from milk drawn from their own herd, which pastures in the fields in the summer and is fed dry hay in the winter. The cheese shop owes its name to agricultural legend Médard Côté, son of Eucher Côté.
Le Rang des ÎLES is available from the cheese maker, at specialty grocery stores and cheese shops as well as from some supermarkets.
