This rindless firm cheese with a fruity, complex flavour has a light-yellow colour and smooth texture. It is made with cow’s milk exclusively from two farms of the municipality of Durham Sud. The herds are fed only millet, clover and wild Prairie grass. This diet results in a cheese that is rich in omega-3 and CLA. Available from the cheese maker, in specialty grocery stores and cheese shops, and supermarkets.
Cheese name origin: “Le pâturage” means “the pasture,” the place where livestock finds nourishment.
