A soft cheese with a washed rind, made from raw Jersey cow’s milk. Its rind is yellow and covered with fine “white fuzz”, a sign that it has been properly aged. It has a hazelnut flavour that lingers after tasting its supple, creamy interior. It can also be used for tartiflettes. The cheese must be removed from the refrigerator two hours before serving. Ideally, it should be served just below room temperature, around 16°C. Available from the cheese maker, at specialty grocery stores and cheese shops, and most supermarkets.
