A semi-soft, unripened cheese made from partially-skimmed milk. This cheese has an ivory rind and interior, both supple with a mild, salty, buttery flavour. Available in lunch-box size. It is available from the cheese maker, at specialty grocery stores and cheese shops as well as from some supermarkets.
