A semi-soft cheese with a mild and salty flavour. This cheese is available in regular or flavoured with dried mint leaves. It may be served fresh, but it is often served grilled, fried or grated in an au gratin dish. Available from the cheese maker, in specialty grocery stores and cheese shops, and some supermarkets.
