This rindless, shiny cheese is quite supple and has large “eyes” throughout. It is aged in a cellar for two to four months and made with pasteurized milk and bacterial cultures. Ivory-yellow in colour, it has a flavour of slightly sweet hazelnut that becomes more pronounced with age. This cheese can be served in many different ways, like in sandwiches, on tasting platters, in dishes served au gratin, and especially in fondues. Available from the cheese maker and from supermarkets.

Accompaniments
These medium-bodied wines offer supple tannins that of ten carry a certain roundness. They are usually dominated by aromas of ripened fruit or woody notes (toast, coffee or vanilla).
