Soft, bloomy rind cheese made with only raw milk offers a mild mushroom aroma. It is very thick and creamy. As it matures, slight reddish spots can appear under its white crust. Available in cheese shops and supermarkets in the Saguenay-Lac-Saint-Jean region.
