Firm, rindless cheese with a cream-coloured interior, a butter aroma and a hazelnut flavour that enhances with age. Several varieties, including 3 months (mild), 4 to 9 months (medium strong), 10 months to 3 or 7 years (strong and very strong). Available in most specialized cheese stores and supermarkets.
