Firm, rindless cheese with cream-coloured interior and a buttery aroma with hazelnut flavour that enhances with age. Several varieties: 3 months (mild), 4 to 9 months (medium strong), 10 months to 3 or 7 years (strong and very strong). Available in most specialty grocery stores and supermarkets.
